Some lectins can be tolerated on after certain things are done to the food that contains them, such as cooking it, or washing and soaking it. Some people can tolerate the same lectins that others can not. Some people, due to a genetic predisposition are allergic to certain lectins and react negatively to them.

Doctors are coming to realize that certain lectins are responsible for the rising number of people suffering from chronic digestive conditions and autoimmune conditions. Remember that osteoarthritis is an autoimmune disease. What happens is that our bodies either react positively or negatively to the lectins. Our bodies are reacting negatively to certain lectins and we are then developing these chronic digestive conditions and autoimmune diseases.
